The default settings for Apache result in logs that Summary can read, although you will need to move them somewhere else before the GUI version can access them. Switching to NCSA Combined format would be better though, see the Apache manual, <http://httpd.apache.org/docs/logs.html#combined>. For log rotation there are several third party tools and some builtin tools that will all do the job, see any of several sources, such as <http://httpd.apache.org/docs/logs.html#rotation>.
