If you are using Apples's default configuration the log files will be in 
"/private/var/log/httpd".

You configure the log file format in the Apache configuration file, 
httpd.conf. Apple puts that file in "/private/etc/httpd".

If you are running OS X Server there is also an Apple supplied server 
configuration utility to configure the log file format, but it tends to 
corrupt the log format so I don't recommend using it.

If you are running the Macintosh version of Summary you need to move the 
logs to some other location. Apple doesn't allow Carbon applications to 
read files in /private. The OS X Command Line version of Summary can read 
logs directly from that location.
