Yes, this can be done and is reasonably easy to setup. Many people run
Summary on one machine, reporting on web sites served by several other
machines. This approach has advantages and disadvantages, which approach
is best depends on several details your particular situation.

When you setup Summary on a different machine you will either need to
FTP/SFTP the log files over from the web server or mount the web servers
hard disk on the machine running Summary so you can make a
shortcut/symbolic link/alias to them in Summary's Logs folder. You can
setup FTP/SFTP transfers on the Log Downloading configuration page.

Running everything on a single machine is simpler and cheaper to setup,
but everything needs to fit within the resources of a single machine.
Running different services on separate machines is more reliable overall
but somewhat more expensive and somewhat more complex to setup.
