Generally you want to restore the most recent backup. You only need to
restore one backup, though if that one crashes or fails in some way you
can try a different one.
Remember that restoring a backup will reset the configuration to what it
was at the time the backup was made.
Reprocessing all of you logs will also work (if you still have all of
them). Restoring a backup will just be much faster.
